Food Safety Breach Forces Temporary Closure of Mama Tina’s Gumbo
Mama Tina’s Gumbo was shut down on March 16 at the Houston Livestock Show and Rodeo after a customer fell seriously ill. The diner reported chills, nausea, fever and even vomiting blood after eating the gumbo. A local news outlet covered the incident. Health inspectors uncovered several food handling violations. The gumbo had been cooked off-site, cooled in non-food-grade containers, and stored at an unlicensed location. It was later transported in a refrigerated trailer and thawed before service. Officials also noted missing temperature logs, improper storage and unapproved food sources. Meals prepared more than 24 hours in advance were not date-stamped. Operators cooperated fully, received food safety training, and switched to approved equipment. The closure was lifted the following day. Mama Tina’s Gumbo was cleared to reopen and continued serving through March 22. Beyoncé has not publicly commented on the incident.
