How to Make Crispy Nigerian Scotch Eggs at Home
Nigerian Scotch eggs are a popular snack in bakeries, fast-food outlets and at parties. Each one has a boiled egg wrapped in seasoned sausage meat, coated in breadcrumbs and fried until crisp and golden. To make six Scotch eggs, you will need six boiled eggs, 400–500g of sausage meat, plain flour, one beaten egg, breadcrumbs, black pepper, thyme, onion powder, nutmeg, salt and vegetable oil for frying. Boil the eggs until hard, cool them in cold water and peel carefully. Season the sausage meat with the spices and salt, then divide it into six portions. Flatten each portion, wrap it evenly around an egg, and seal the edges. Roll each coated egg in flour, dip it into the beaten egg, then cover with breadcrumbs. Deep-fry in moderately hot oil until golden brown and cooked through. Drain on paper towel and serve warm with ketchup or your preferred dip.
